The story begins in 1963, when the estate was acquired by the D’Ausilio family, who wanted to breathe new life into this property with enormous potential.
The project was clear: to enhance the land, respect the surrounding nature, and create a farm that would be a symbol of excellence in the area. A buffalo farm was established, which over time has become a symbol of quality, care, and tradition.
Production and supply chain, a direct link with nature
Imagine olive trees, meadows, rows of vines, and the scent of morning in the air. Imagine buffalo grazing, fresh grass, and the sun slowly setting. Here, the D’Ausilio family has chosen to work with passion: raising animals with respect, supporting biodiversity, and keeping alive a connection with the traditions that represent the land, the community, and their identity.
In buffalo farming, each animal is cared for as part of the family, and the approach is sustainable, focused on quality and well-being. The result is dairy production that has the taste of the land, the freshness of milk and the history of generations.
From a large farm to production: the D’Ausilio family has set up a short supply chain in which milk becomes cheese, fields become vegetable gardens, and olive trees become oil. Each stage is managed with dedication and care: milking, cheese-making, ageing, and processing. The result? Genuine, traceable products that reflect the local area and bring authentic quality to the table.
The dairy, the magic of buffalo cheese
At the heart of the farm is the dairy, where fresh buffalo milk is transformed into fine cheeses: mozzarella, burrata and mature cheeses. You too can enjoy this experience by taking part in guided tours or workshops. Watching the artisans at work, smelling the warm milk, touching the curd… all this creates a direct link with the land.
The process is simple but not trivial: respect for the raw material, hygiene, passion, and artisan care. The result is a product that tastes of history, knowledge, and authentic flavours.
